Kevin Pedeaux has operated multi-vendor food and hospitality spaces in New Orleans since 2015. Today he runs St. Roch Market — eleven independent vendor businesses under one roof, one bar, daily settlements, vendor agreements, shift handoffs, and the kind of operational complexity that breaks generic software fast.
He didn't build CoreRail because he thought it was a good idea. He built it because he was doing vendor settlements in spreadsheets at midnight and knew there had to be a better way. The first version ran inside his own building. Every feature exists because a real operator needed it to exist.
He also runs three CR Coffee locations and a wholesale roasting operation. He understands what it means to have multiple revenue streams, multiple teams, and no margin for systems that fail during service.
